Laetitia's French Tea Cake

I have a habit of baking something special for my neighbours for every big occasion, be it Eid, Christmas, Easter or Diwali. It's not about religion, it's about spreading love and togetherness!
I am delighted to share with you the recipe of the cake I made for Easter this year. It's actually one recipe we learnt when we were kids - so very simple to make! It's perfect for the ladies who want to organize a nice French high tea or a breakfast à la Française, and it also works for the mothers who want to initiate some baking activities with their little ones!
Ingredients:
- 1 pot of dahi - Preferrably the small size of Nestle/Amul/Danone plain yogurt.
Then we use the same empty pot as glass measure for the other ingredients and we incorporate the below ingredients in the batter, one after the other.
- 2 pots of sugar
- 3 pots of maida
- Half pot of melted butter
Then...
- 3 eggs
- 1 big spoon of baking powder
- 1 pinch of salt
Very easy as I said...the kids don't need to read the glass measure as the initial pot of dahi is used as one :).
Method:
Whip everything in a nice bowl. Ensure the batter comes out very smooth and pour everything into your rectangular mould (silicon ones are the best).
Ensure your oven is hot enough (180C).
Keep the mould in the oven for 30 min. It should be crispy on the outside and soft in the inside.
Ideally, serve it right away, warm, straight out of the oven. Slice it and serve it with whip cream, jam or honey. :)
Note: You can add also in the batter choco chips; or apples or even pear! You can really use this as a base and let your baking skills and creativity go wild :).
