Sweet Superfood Nuggets

Dessert has always been my weakness. I love it so much that I can eat ice cream for dinner and gulab jamuns for breakfast. But regular sweets have a tendency to go straight to the hips and plaster themselves there semi permanently. However, the right recipe is packed with health and tastes delicious too.

These nuggets are made with all things tasty and nourishing. Raw cacao is packed with antioxidants, peanut butter has protein, dates contain vitamin B, coconut oil is healthy fat, chia seeds are packed with calcium. Whew! The ingredients are hardworking but the recipe is super simple.

Cooking time: 10 minutes

Ingredients: (For 15 nuggets)

1 cup chunky peanut butter

4-5 heaped tbsps raw cacao powder

A few tsps of virgin coconut oil

3 tsps coconut sugar or honey

15 seedless, soft dates

1 cup chia seeds

Method:

  • Mix peanut butter, coconut sugar and raw cacao powder. Thin with a little bit with coconut oil till almost spreading consistency.
  • Roll a date tight into a cylindrical shape and then spoon the mixture around it.
  • Then roll it in the chia seeds (it might get messy so do it with clean hands) so they cover the nugget.
  • Set all the nuggets in a tray and place it in the refrigerator (not the freezer). They taste best the next day.
